We only use vegetarian rennet so that our Feta is suitable for vegetarians and we use our own cultures, developed over generations to mature the cheese.
A one-ounce (28-gram) serving of feta cheese contains:

Carbohydrates: 1 gram
Sugar: 1 gram
Sodium: 316 milligrams.
